Crispy toast, melty cheese and a just-right egg over easy… in less time than you’ll wait in the drive-up
With another work-week just hours away (sorry for the reminder) , I wanted to share a quick-fix breakfast sandwich recipe that keeps me out of the drive-thru on Monday mornings.
I call it the Sunrise Grilled Cheese to be cute and bring some, well, sunshine to my Monday moogies, but it is just a super-basic grilled cheese with an over-easy egg in the middle. Nothing fancy, but just what I need to make sure I get some protein in on a busy Monday morning between my YouTube workout and opening up the (home) office.
Recipe below: I hope it helps to elieviate some stress and minimize Monday moogies

Simple Recipe for an Easy Sunrise Grilled Cheese
Ingredients:
- 1 Egg
- 1/4 cup shredded cheese or 1 slice of cheese (more to taste)
- 2 slices of choice of bread
- Seasoning to taste
Directions:
- Heat and grease frying pan on the stove
- Add egg and fry over easy (or cook in your preferred style). Season as desired.
- While frying/cooking the egg, toast bread in the over (350 degrees, 3-4 minutes)
- Remove toast from oven. Add cooked egg and cheese to the bread
- Heat in oven for 4 minutes to melt cheese and continue toasting bread.
- Take out and enjoy!
Optional: Add hummus, spicy mayo, avocado spread etc. to the sandwich before toasting
Nothing fancy, but hopefully just tasty and satisfying enough to help start your week off right while skipping the stess of checking emails from the Dunkin Drive-up!
