11-Minute Lunch: Gourmet Grilled Cheese

Wasn’t super excited about making luch today -nafter having made breakfast and anticipating making dinner later…

So, I threw some ingredients from the fridge on bread, let them toast while relaxing with The Middle . It hit the spot to hang us over until dinner tonight.

Thought I would share in case it inspires or helps anyone else out!

For the Vegetarian-

Ingredients:

  • 2 slices of bread (Choice of whatever you keep on hand or is about to go stale… We had Whole Wheat)
  • 1/2 cup of greens (Spring Mix and Spinach)
  • 1/2 cup or 1 slice of cheese of choice ( We had shredded cheddar jack)
  • Hummus, to cover one slice of bread

Instructions:

  1. Gather ingredients
  2. Spread hummus on one slice of bread
  3. Layer cheese and greens on other slice of bread
  4. Place hummused bread atop cheese and greens slice
  5. Pop in oven at 400 degrees for 7-9 minutes to preference
  6. Enjoy!

For a meat option-

Ingredients

  • 2 slices of bread (Choice of whatever you keep on hand or is about to go stale… We had Whole Wheat)
  • 1/2 cup or 1 slice of cheese of choice ( We had shredded cheddar jack)
  • 3-5 slices of Ham

Instructions:

  1. Gather ingredients
  2. Layer cheese and ham on one slice of bread
  3. Place other slice of bread atop cheese and ham
  4. Pop in oven at 400 degrees for 7-9 minutes to preference for melted cheese and toasted bread
  5. Enjoy!
