I always feel SO grateful, and lately downright rich, when I get to cook a meal with fresh veggies!
Tonight’s indulgence, vegetarian Chik’n tacos with fresh white onion and green pepper.
Here’s the recipe.
What You Need (Ingredients):
- Oil/ Butter for Sauteing
- ½ White Onion
- 1 Green Pepper
- 1 Cup Meatless Chik’n Strips
- ½ Cup of Shredded Cheese of Choice(optional)
- 5 Corn Taco Shells
What To Do (Instructions):
- Chop the onion and pepper
- Saute pepper and onion in oil, season to taste ( I use chili powder, garlic powder, cumin, creole seasoning, black pepper) (medium heat, 7 minute)
- Add in frozen Chik’n strips. As they thaw, chop them into smaller pieces. Saute on medium low for 10 minutes
- Bake/ warm taco shells in oven for 4 minutes at 400 degrees
- Flip shells, add Chik’n, pepper and onion to shells, top with shredded cheese
- Warm/bake for 3 minutes
- Enjoy!
