Fresh Fix: Vegetarian Chik’n Tacos

I always feel SO grateful, and lately downright rich, when I get to cook a meal with fresh veggies! 

Tonight’s indulgence, vegetarian Chik’n tacos with fresh white onion and green pepper.  

Here’s the recipe.

What You Need (Ingredients): 

  • Oil/ Butter for Sauteing
  • ½ White Onion
  • 1 Green Pepper 
  • 1 Cup Meatless Chik’n Strips 
  • ½ Cup of Shredded Cheese of Choice(optional) 
  • 5 Corn Taco Shells

What To Do (Instructions): 

  1. Chop the onion and pepper 
  2. Saute pepper and onion in oil, season to taste ( I use chili powder, garlic powder,cumin, creole seasoning, black pepper) (medium heat, 7 minute) 
  3. Add in frozen Chik’n strips. As they thaw, chop them into smaller pieces. Saute on medium low for 10 minutes
  4. Bake/ warm taco shells in oven for 4 minutes at 400 degrees
  5. Flip shells, add Chik’n, pepper and onion to shells, top with shredded cheese
  6. Warm/bake for 3 minutes 
  7. Enjoy!
