Vegetarian Chik’n Pot Pie Skillet Casserole

Sharing another cozy casserole recipe. This one is quickly becoming a favorite of mine and Jesse’s. I love it because it reminds me of my dad’s famous Chicken Pot Pies from when we were kids. We always knew this time of year that it was Pot Pie season!

Give it a try, mix and match your favorites or what you have available and enjoy and stay cozy!

Ingredients:

  • 2 boxes Walmart brand shells and cheese (2 boxes of noodles, 1 cheese powder pack- save the other for another recipe)
  • 2 tbsp butter
  • 2 cups vegetable broth
  • 1 cup of milk
  • 1 can of mixed veggies
  • 1 can of cream of mushroom soup
  • 2 cups meatless chick’n strips
  • ½ can frozen biscuits
  • Parmesan cheese to taste (sprinkle on the top)
  • Seasoning to taste (garlic powder, seasonall, black pepper, paprika, chili powder)

Instructions:

  1. Preheat and Prepare: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease a skillet with butter and set it aside.
  2. Roux Creation: Add the cheese powder from one box of shells and cheese into the greased skillet. Mix it with the butter to create a roux.
  3. Pasta Preparation: Add the pasta from both boxes of shells and cheese into the skillet. Pour in the vegetable broth and milk. Bring it to a boil, then cover and reduce the heat to simmer for about 25 minutes, allowing the pasta to cook in the liquid.
  4. Chick’n Prep: While the pasta is cooking, prepare the meatless chick’n strips. Cook them in the microwave according to the package instructions. Once cooked, marinate them in the cream of mushroom soup and season to taste with garlic powder, seasonall, black pepper, paprika, and chili powder.
  5. Adjust Consistency: Measure ½ can of water and add it to the skillet to adjust the consistency of the pasta mixture.
  6. Veggies and Chick’n: After the pasta is fully cooked, fold in the cream of mushroom soup and chick’n mixture along with the can of mixed veggies.
  7. Biscuit Crust: Break apart the thawed biscuits and layer them on top of the pasta mixture. This will act as a golden biscuit crust.
  8. Cheese and Seasoning: Sprinkle Parmesan cheese to taste over the top of the casserole. Season with additional garlic powder, seasonall, black pepper, paprika, and chili powder if desired.
  9. Bake: Place the skillet in the preheated oven and bake for 15-20 minutes, or until the biscuit “crust” is golden brown.
  10. Serve and Enjoy! Allow the casserole to cool slightly before serving. Scoop out generous portions and savor the creamy, comforting flavors.
