Mind Your Own Biscuits: Holiday Biscuits for all Holiday Schedules

I’m going to be honest. I never really got the big deal about biscuits. 

I would probably, at one point,  have gone as far as to say that I was not a fan. 

When I moved to the South, I knew they were held in high regard. They came with almost every meal. I have always been a fan of mixing my food, so I started using my biscuits as a vehicle to deliver other delicious food into my mouth. This quickly became my favorite way of eating biscuits. Whether they are scooping up breakfast scramblers, being stacked with eggs, veggies, and cheese for a breakfast sandwich, or soaking up mashed potatoes at the Thanksgiving table, I have come to appreciate biscuits playing this role on my dish. 

If you are tasked with bringing biscuits to the Thanksgiving table this year, I have a few different recipes to help you, regardless of your time availability. 

Ingredients: 

  • 1 Can of pre-made biscuits 
  • About 2 tbsp butter
  • About 2 tbsp of buttermilk
  • 1  tbsp Parmesan cheese/topping (powdered)

Steps: 

  1. Open a can of biscuits
  2. In a small bowl, mix butter, buttermilk, and Parmesan cheese to brush over the biscuits
  3. Separate the dough into the pre-made discs 
  4. Optional: Knead the discs a bit to make them look a bit more “homemade” 
  5. Brush with butter and buttermilk mix
  6. Bake in the oven according to the container’s instructions

Ingredients: 

  • 4 ½ Cups Bisquick
  • 1 ⅓ Cup Buttermilk 
  • 2 tsp Sugar 
  • 2 tbsp butter (melted) 
  • Extra melted butter, buttermilk for brushing 
  • Optional: Parmesan Cheese Topping (Powdered) 

Steps: 

  1. Mix Bisquick with buttermilk and sugar in a bowl 
  2. Add melted butter 
  3. Stir until soft dough forms 
  4. Turn out onto a well-floured surface
  5. Knead (about 20 times) – Don’t be afraid to add flour as needed 
  6. Roll ½ or thicker 
  7. Cut out 2 into discs (I use cups) 
  8. Place them close together on an un-greased sheet 
  9. Melt extra butter and mix with buttermilk and Parmesan cheese (about 1 tbsp each) 
  10. Brush top with melted butter mix 

Ingredients: 

  • 4 ½ cups of flour 
  • 2tbsp baking powder 
  • 2 tsp sugar
  • 1tsp baking soda 
  • 3 eggs
  • 1 ½ cup of buttermilk 
  • 1 cup (2  sticks) of butter (melted)
  • ½ cup (1 stick) of butter, cubed
  • Optional: Extra buttermilk, butter and Parmesan cheese/ topping 

Steps: 

  1. Whisk together flour with baking powder, soda and sugar 
  2. Mix in buttermilk, eggs and 2 sticks (1 cup) of melted butter 
  3. Add the cubed butter to the dough
  4. Mix wet ingredients into dough, and knead thoroughly
  5. Chill the dough in the fridge for at least 30 minutes 
  6. Roll out chilled dough and cut into biscuits (I use a cup) 
  7. I stack 2 discs on top of each other to make them sandwich-ready
  8. Optional: Mix about ½ tbsp butter with ½ tbsp buttermilk and ½ tbs Parmesan cheese topping
  9. Optional: Brush the biscuits with melted butter, buttermilk, and Parmesan mix. 
  10. Bake on a cookie sheet at 425 degrees for 15-20 minutes
