Budget-Friendly Picnic Pasta Salad

This Memorial Day, my family decided to have a potluck picnic instead of a lunch out. The idea was a budget-friendly holiday gathering. I opted to bring my favorite pasta salad. 

It is a summer favorite of mine. Simple, affordable, and makes me feel good about getting some fresh veggies on my plate. 

Here it is: 

Ingredients: 

  • 1 Box of Rainbow Rotini ($1-$2/ box) 
  • 1 Bottle Zesty Italian Dressing ($1.25 at Dollar Tree) 
  • 10 Oz Cherry Tomatoes ($3 at Walmart) 
  • 1-2 Cucumbers (about $1 each) 
  • 4 Oz Feta Cheese (About $2 at Aldi) 
  • Other veggies (onions, broccoli, etc)

Directions: 

  1. Boil water in pot on a stove to cook the box of pasta
  2. Add box of pasta to boiling water, cook for about 11-12 minutes to taste 
  3. Let pasta cool 
  4. Refrigerate cooled pasta for at least 1-2 hours to chill 
  5. Chop cucumbers 
  6. Add dressing to chilled pasta to taste
  7. Add in veggies and feta to taste (tossing as you add) 
  8. Chill and serve cold
